This favourite of the Queen’s has always been made with strawberries, but here at Cake & T, we decided to put our take on it. Victorian sponge cake layers are first brushed lightly with a berry jam, a generous dollop of Chantilly cream is then added with fresh raspberries. The cake is then covered with more Chantilly cream and more fresh raspberries are used to decorate the top
